Avocado “hollandaise” sauce is the brainchild of Felicia Wu, the food blogger behind Felicia’s Fab Foodz. “It’s the perfect fancy-looking Sunday brunch, and it’s so easy to whip up,” she wrote on Instagram. To make it, put half an avocado in a blender with a little lemon juice, olive oil, your choice of milk, and salt, and blend until smooth.

You can get creative and try other options too, like drizzling it over a tofu scramble. With a sauce this delicious—and good for you, as it’s packed with healthy fats!—you really can’t go wrong.
